Spanish Tapas Dishes include;


  • Escalivada - This colourful Catalan dish is a wonderful way to use those seasonal Mediterranean vegetables of roasted peppers, aubergines and onions and works well served up to a hungry crowd.


  • Gazpacho Andaluz - This classic and cooling Spanish soup is originally from Andalusia and made with lots of ripe and juicy tomatoes, herbs, onions and chillies. Even though it's traditionally served in the summer, it makes a year round great tapas


  • Ensalada con Seville - A traditional salad of Seville, using their juicy oranges, drizzled with Spanish sherry and mixed with olives.


  • Romesco de Peix - Romesco is a tomato based sauce that originated from the Tarragona region in Catalonia. Made by the local fisherman, to be eaten with seafood, it can contain any number of ingredients including garlic, almonds and peppers.


  • Chorizo y tomates con manchego - using sweet, organic tomatoes for this sweet, smoky, spicy dish with Spanish chorizo, red wine, honey and cubes of manchego cheese.


  • Tortilla - No tapas selection is complete without the traditional Spanish potato omelette that can be made large or small and is the perfect accompaniment to a simple salad.


  • Empanada two ways - These classic Spanish pastries are served in most Spanish speaking countries across South America as well as the Philippines. The dough is a cross between bread and pastry and is great made with white wine for a little extra flavour.



The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.00am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park. The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.


At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared. The day will end at approximately 3:30pm.


Please note that the dishes listed may vary due to the availability of fresh produce as a result of seasonal changes. Please note Children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by 1 paying adult.
