Taste of Persia - Saturday 28th September 2024


Experience the flavours and culture of this magical land as we take you on a journey through this rich, historical region of southwestern Asia, now home to modern day Iran. 


Kutu sabzi 

This is Persia’s take on the humble frittata, packed with berries, nuts and green herbs, it makes an excellent picnic or lunchtime treat, eaten hot or cold.


Salad e Shirazi 

A refreshing, zesty classic Persian salad that marries well with the flavours of this rich culinary landscape.


Fesenjan  

The Persians are masters of stews and dishes to feed a whole neighbourhood. This sweet and sour saffron chicken with pilau rice is super tasty and will impress your dinner guests.


Khoresh e Gormeh 

This flavourful, slow cooked lamb stew with kidney beans and herbs, has a balance of textures and taste to dress up any dinner party table.


Khoresh e bademjoon  

Your vegetarian guests will love this simple casserole of aubergines and tomatoes, full of spices and cooked down to a rich, saucy finish.


Sholehzard 

This beautifully, light and fragrant saffron pudding is a classic in every Persian household and a beautiful finish to our special day spent in this historical part of the world.



The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school’s dining room from 9.00am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park. The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.


At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared. The day will end at approximately 3:30pm.


Please note that the dishes listed may vary due to the availability of fresh produce as a result of seasonal changes. Please note Children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by 1 paying adult.
