Whether or not you’ve holidayed in Spain, join us in this class as we experience the pleasures of this incredible country, steeped in history and recognised for their contribution to the culinary world. 


Gazpacho

No mere cold soup but a zingy, peppery, herby favourite, perfect for hot summer days, served with lots of crusty bread or enjoy as a cheeky little shot before lunch.


Seafood Paella 

Let’s all join together and create this huge seafood paella, packed with prawns, mussels and chorizo. This is the classic version that will surprise and delight you.


Tortilla Espanola

This is no humble egg omelette, the Spanish classic is packed with caramelised onions and potatoes, slow fried in olive oil and layered with eggs that are perfectly eaten hot or cold. Grab a glass of Rioja and you’re good to go!


Patatas Bravas

Your favourite Spanish tapas of spicy tomato and fried potatoes is here and one of the best dishes to make on any cook's menu.


Pollos al ajillo

No Spanish menu is complete without this traditional garlic chicken stew style dish. Packed with flavour and the perfect meal to serve a hungry crowd.


Albondigas

Classic smoky Spanish beef & pork meatballs, cooked in a rich tomato sauce that is the ultimate tapas treat or enjoy in place of the usual meatballs and pasta.


Crème Catalina

This creamy, Spanish style crème brulee custard is a perfect finish to any Spanish dinner. Light and velvety with sweet and spice flavours.  




The day begins at 9.30am and we invite you to join us with a welcome tea or coffee in the cookery school at 9.15am, where you will have a chance to meet your fellow delegates and chef. Your chef will talk you through the class menu and how the day will run before you are assigned a workspace in our fully equipped kitchen, overlooking the beautiful estate at Braxted Park. 


The step-by-step tuition is fun and easy to follow and the cookery school team will be available to assist you throughout the day.


At the end of a full day of cooking, everyone’s efforts will be rewarded with a glass of wine and a sit-down meal that has been cooked during the day, where hints and tips can be shared with the group while enjoying the food that you have prepared.


Please note that the dishes listed may vary due to the availability of fresh produce as a result of seasonal changes. Please note Children over the age of 8 years old are welcome to attend and participate in any of our classes at the full cost of a place but MUST be accompanied by 1 paying adult.
